  6. Check fritatta at 30 minutes. Once it is firm, it is done (check by sliding a sharp knife in the middle. It should come away mostly clean of egg).
  7. Remove from heat and let sit for 5 minutes before slicing into 4 or 6 pieces. Excellent with a side of store-bought or fresh homemade salsa.
  8. This is just a base recipe. You can add whatever vegetables, proteins, and cheeses you like. Classic ham and mozzarella, parmesan and bacon, three-pepper, jalapeƱos and large diced tomatoes are other favourites. I sometimes add a second grated zucchini, a full 8oz carton of mushrooms, and rings of red onions to this version.
