  1. Poolish Ingredients: (Mix all ingredients in a bowl. Close the bowl and let it rest for 9-10 hours at room temperature.)
  2. 106 gr bread flour
  3. 100 gr whole milk
  4. 6 gr condensed milk
  5. 25 gr granulated sugar
  6. 1 gr yeast
  7. Dough Ingredients:
  8. 250 gr bread flour
  9. 50 gr sugar
  10. 138 gr whole milk
  11. 25 gr heavy cream (can be replaced with whole milk)
  12. Fat Ingredients:
  13. 31 gr butter
  14. 5 gr salt

  1. Knead poolish ingredients and dough ingredients until you get 1/2 elastic dough.
  2. Add fat ingredients and knead until you get a silky and super elastic dough.
  3. Let the dough rest and rise for 1-2 hours depending on the room temperature.
  4. Deflate the dough. Divide the dough into 3 portions. Roll out and shape.
  5. Arrange the dough in a 19x10x10cm shokupan pan that has been greased with butter.
  6. Let it rest again for the second time for 1-2 hours depending on the room temperature.
  7. Bake in preheated oven 175C/350F for 30 minutes.
