  1. Make sure all items are prepared before you start cooking. Chop pecans. Sift cocoa and powdered sugar together. Measure out vanilla; set aside. Butter large baking pan with one inch sides. The bigger the pan the thinner it will be, making it go further.
  2. Melt butter and cheese together in large stock pot. Stir constantly. I use an immersion blender to combine once all is melted. Be sure to stay with it because it will stick and scorch. (Ask me how I know 😳)
  3. Once cheese & butter is melted and blended together, slowly add cocoa sugar mixture. Stir constantly. (My Dad used to do this part for Moma.). So I improvised with a handheld mixer.
  4. Cook over low heat until it reaches 125* on candy thermometer, soft ball stage. Stirring occasionally, to prevent sticking (mixer)
  5. Remove from heat. Stir in pecans and vanilla. Mix to blend well.
  6. Pour into prepared pan, spread to edges. Let cool completely on cooling rack. Cut into small one inch squares. Store in airtight container.
